Method
- Pull a double ristretto (18 g in, ~36 mL out) into a 150 mL ceramic cup.
- Steam the milk to 60–65°C, folding the surface to create a glossy, microfoam texture with no large bubbles.
- Swirl the jug to settle the milk and settle the foam evenly.
- Pour steadily from a low height, letting the white foam break the crema in a thin, even layer — no thick foam dome.
- Finish with a subtle rosetta or a clean, flat surface.
